We are excited to announce our partnership with Ram & Rooster, a Chinese-inspired fine dining restaurant that opened in 2024. Located in the heart of Metuchen, NJ, Ram & Rooster is the brainchild of Chef and Owner, Sean Yan
We met Chef Yan, at our counter during our friends and family launch. Chef Yan loved the experience and the story of how Sushi by Sea came to life, especially how we work and partner within our network and community
Chef Yan showed us some of his pastry magic and after a few meetings, we agreed to offer our pastry and dessert menu to him as the sweet ending to our omakase. He will be creating simple yet unique desserts and treats to match the Sushi by Sea experience
Trained at the Institute of Culinary Education, Chef Yan earned his chops under the tutelage of accomplished chefs, Ben Nerenhausen and David Viana. Today he is Pastry Chef at Heirloom Kitchen, where he has wowed patrons with unique and unexpected flavors and presentation of his desserts
Chef Yan looks to change perceptions about Chinese food by elevating the best ingredients to satisfy Epicurean palates. Taking both his experiences in the industry and his nostalgia for home-cooked meals, he plans to create a novel experience at Ram & Rooster, offering open kitchen seating as well as private dining, while paying homage to his parents and heritage
